Have GF Cake and Eat It, Too (Dorothy Lane Market, Dayton)
Dorothy Lane Market and Bites of Nostalgia have partnered to present stunning, tasty and… wait for it… GLUTEN FREE cakes. “Uh, what? How? Say again?”
Here is the skinny (or not so skinny, after tasting these). Bites of Nostalgia is a cottage bakery* in Bellbrook, Ohio and is owned and operated by Jessica Vu who suffers from Celiac Disease.
Diagnosed in January 2014, Jessica was already well on her way to a successful baking business and career, but was suddenly derailed when she learned her love of baking was literally making her sick.
Not one to let a life changing diagnosis get her down, she put her fingers to the internet, her nose into books and her hands in the kitchen on a quest to replace all of her delicious treats with gluten free versions. “It wasn’t easy. The chemistry of gluten free baking is a whole other animal. I had to wipe the years of baking and methods from my memory and just start from scratch.”
She started with biscotti since she was already supplying Dorothy Lane Market with the traditional gluten-filled product. One by one, each flavor got a big makeover. “The Ginger Molasses was the hardest. I am so used to baking just working for me. Recipe development had always been easy, and when twelve batches later it still didn’t taste like Great-Grandma’s, I was really frustrated.”
Pushing through the set backs, she finally got them all just right and transitioned DLM to the new product – for the first few months she kept the switch to herself, “…as to not turn people off. Sometimes when customers are told something is GF, they automatically decide it’s not good, even before trying it.”
A year later when DLM called to say they were taking samples for gluten free cakes, she jumped at the chance. With chocolate and white cake already in her repertoire, she baked up and delivered what she believed to be the best gf cakes she had ever tasted. It seems DLM agreed, and after fine tuning flavor offerings, sizes, and processes, the gluten free line was complete.
(Cakes are made in Bites Of Nostalgia’s gf kitchen and provided to DLM for custom frosting designs. Each cake is made to order and require a 24 hour notice.)
